PROOF: Past & Future Collide
For one night only, Merrill House + LIFE AU LAIT present the third and final instalment of the celebrated PROOF party series.
Inspired by the French tradition of the apéritif dînatoire, the evening unfolds as a roaming feast of sparkling wine, beautiful bites, conversation, and dancing—a gathering where dinner dissolves naturally into celebration.
Guests will move between two worlds inside Merrill House.
In Alexandria, a Renaissance-inspired tableau of cheeses, charcuterie, grapes, goblets, and candlelight evokes the decadence of centuries past. Wine flows by the bottle as guests gather around the evening’s centrepiece: the legendary “big tin” of caviar, presented by master purveyor Nick Stark, served in generous bumps throughout the night.
Downstairs in the cellar, the future arrives.
Here, the dance floor glows beneath a space-age atmosphere of cosmic desserts by Butter Dream Cakes and a trio of experimental cocktails designed for inter-era travel:
- Dark Matter Martinis: Inky black vodka martinis drawn from the invisible forces holding the universe together.
- Teleportation Tonics: Bright, electric tonics with vodka, gin, or zero-proof for smooth passage between timelines.
- Stardust Drops: Vodka gel shots—condensed bursts of liquid energy, released all at once.
The evening includes:
